Hastings House Celebrates 25 Years With Cookbook Launch

Hastings House Country Estate on Salt Spring Island is celebrating its 25th anniversary with the launch of a cookbook. This handsome hard-cover 96-page book makes a lyrical read and encompasses the history of Hastings House – intriguing historical anecdotes and romantic liaisons – combined with mouth-watering photographs, and 31 of Executive Chef Marcel Kauer’s favourite recipes.

Hastings House co-owner, Bonny O’Connor, said: “We wanted to honour the previous owners and chefs of Hastings House, as well as Chef Marcel Kauer, whose devotion to this country estate has helped to create the magical ambiance and tantalizing flavours guests love today.”

Chef Marcel Kauer’s recipes reflect his passion for local and seasonal produce. Known as the “organic gardening capital of Canada”, Salt Spring Island offers a true bounty of produce. The daily menu changes with the season and features local seafood, fish, and organic produce grown by the island’s farmers, as well as plentiful amounts of fresh produce from the hotel’s own gardens. By popular demand, Salt Spring lamb is featured as an entrée on every menu at Hastings House.
